Eating Your Way to Better Health

Posted by:

Inflammation is your body’s reaction to some sort of attack. It can fight off bacteria and viruses and helps to repair damaged tissues. Most people are familiar with the signs of inflammation in your body – there may be pain, some swelling, a general feeling of discomfort, this is acute inflammation and is meant to protect us. Lately though another type of inflammation has been getting more and more attention – chronic (long-term) systemic inflammation. This ...

Why We’re Here

Posted by:

Recently on the greenestbeans.com Facebook page I posted an infographic detailing a handful of the estimated three hundred symptoms that may be associated with celiac disease. Someone I have been friends with since elementary school saw the post and replied that she had more than half the symptoms listed. She wondered what type of testing might be involved and why, if she had celiac disease, would it not have been diagnosed by this point in her life. ...

Keeping Us in the DARK

Posted by:

When I first heard about the “DARK Act”, I was sure it was part of a plot from a science fiction movie or some other prop dreamed up in Hollywood. In my mind I could see an evil villain sitting behind a big desk, gleefully rubbing his hands together while cackling at the idea of preventing people from knowing what was in the food they were eating. The reality is not too far off from what I imagined. ...

How Sweet It Is

Posted by:

A quick search of the grocery store shelves will reveal many different products which contain high fructose corn syrup (HFCS). From baked goods, to canned goods, frozen items to beverages, it seems that few products are immune from the presence of the controversial sweetener. What is it about HFCS that makes it so controversial? I’ve seen the ads on TV (sponsored by the Corn Refiners Association) telling me that my body doesn’t know the difference between sugar ...

While many of us consume gluten with no problems, an estimated one out of every one hundred people are not able to do so. These people suffer from celiac disease. In addition to the millions of people who have been diagnosed and know they are living with ...

Ode to Grocery Shopping

Posted by:

Grocery shopping used to be
A mindless quick activity.
I’d push my cart from aisle to aisle,
Grabbing things that made me smile,
I guess I was a bit naïve
But I’ll admit I did believe
That overall our food was safe
And now that thought just makes me chafe
‘Cause when I started learning more
About the food that’s in the store
GMO’s and pesticides,
Unhealthy artificial dyes,
Then grocery shopping ceased to be
Something that was so carefree.

Butterfly Fly Away

Posted by:

Old Man Winter is finally starting to release the hold he has had on my little part of the world for the last few months. Yesterday while waiting for the bus with my daughter we were serenaded by little birds gathered in the top of one of the trees. This past weekend our backyard was alive with grey squirrels, the first time I have seen them around in ages. And just this morning I saw a chipmunk, ...

Embracing Change

Posted by:

I look back at the diet of my youth and cringe. I was the epitome of a junk food junkie. Memories of pudding that never saw a refrigerator make me shudder. I’m pretty sure I ate enough chocolate, cream filled snack cakes to feed a small country. In high school I bought the same lunch every day – chips, lemonade, and a brownie (packaged, definitely not homemade). Meals were highly processed as well. My mother was a good cook as ...
